POHA CUTLETS

Ingredients :

Poha – 2 cups
Salt to taste
Boiled and mashed potatoes – 2 medium
Green chillies finely chopped – 4
Grated ginger – 1 tbsp
Coriander leaves finely chopped – 4 tbsp
Blanched spinach chopped – ½ cup
Grated carrots – ½ cup
Grated paneer – ½ cup
Roasted and coarsely powdered peanuts – ¼ cup
Bread crumbs – ¼ cup
Lemon juice – 1
Garam masala – 1 tbsp
Chaat masala – ½ tbsp.
Oil – for shallow frying

1)     Soak the poha in 1 cup water for an hour, it will swell
2)     In a large mixing bowl add the poha and all the other ingredients except oil
3)     Mix well mashing it to an even mixture
4)     Make oblong shaped cutlets and keep
5)     In a non stick pan add oil and saute them for 15-20 mins on each side till it becomes crisp
6)     Serve hot with chutney of your choice
