RICE & COCONUT PAYSAM - ARISI THENGAI PAYASAM

Ingredients :

Grated coconut – ½ cup
Raw rice soaked in hot water for 2 hours – 3 tbsp
Jaggery – ½ cup
Cardamom powder – 1 tsp
Cashew nuts – 3 tbsp
Kismis – 3 tbtsp
Water – 2 and ½ cups
Ghee – 1 tbsp

Method :

1)     Make a coarse paste of the coconut, rice with very little water
2)     Immerse jaggery in water upto its level and boil till melted, strain it
3)     In a non stick add water and heat
4)     Add the ground paste and cook in low flame till it resembled a porridge
5)     Add the jaggery and boil for another 4-5 minutes till well blended
6)     In a pan add ghee and sauté cashew nuts and kismis till light brown
7)     Add this along with cardamom powder to the payasam
