Ingredients :
Red pumpkin cut into cubes – 1 cup
Salt to taste
Onion finely chopped – 1
Tomatoes finely chopped – 1
Chilli powder – ½ tsp
Coriander powder – ½ tsp
Garam masala – ½ tsp
Jeera powder – ½ tsp
Amchur powder – ½ tsp
Curry leaves – 4-5
Jaggery – 1 tbsp
Oil – 1 tbsp
Finely chopped coriander leaves for garnishing
To grind into a mixture :
Fresh grated coconut – 4 tsp
Garlic – 2
Sesame seeds – 1 tsp
Ginger – 1”
For tempering :
Oil – 1 tbsp
mustard seeds – 1 tsp
turmeric powder – ½ tsp
Method :
1)
Dry roast the sesame seeds in a small pan
2)
Add the seeds along with the other ingredients for
grinding and make a smoothe mixture adding little water, keep aside
3)
In a pan take oil and splutter mustard seeds
4)
Add curry leaves and turmeric powder
5)
Add chopped onions and sauté till light brown
6)
Add tomatoes and sauté till mushy
7)
Add the chilli powder, coriander powder, cumin powder,
amchur powder, salt and garam masala, mix well
8)
add the pumpkin and the ground mixture, jaggery
9)
cover and cook till the pumpkins are done
10) garnish
with coriander leaves and serve hot with rotis
