Ingredients :
Wheat flour – ½ cup
Corn flour – 1 tbsp
Salt – a pinch
Powdered sugar – ¼ cup
Pineapple essence – 1 tsp
Butter – 1 and 1/2 tbsp
Baking powder – ½ tsp
Milk – 1-2 tbsp approx.
Butter – for greasing
Pineapple filling :
Pineapple chunks – ½ cup
Powdered sugar – 3 tbsp
Pineapple essence – 1 tsp
Method :
For the pineapple filling :
1)
Grind the pineapple chunks to a fine paste
2)
Ina pan take the
paste, add sugar and cook till it comes to a thick spreadable mixture

Add the essence and keep aside
For the biscuits :

In a mixing bowl add the wheat flour, salt, sugar, corn
flour, and baking powder, mix well

In another bowl add the sugar, essence and butter and
beat well till it creams
6)
Add the flour mixture and make a smooth firm dough. You
can add milk, I used 2 tbsp
7)
Make small balls of equal pairs (I got 8 balls)
8)
Line half of them in a greased pan
9)
Apply the filling on each of them
10) Place
the other pair of the rounds on top and press so that the filling spreads. Do this
gently, making sure the spread doesn’t ooze out
11) Bake
this for 15-20 mins or till the sides get light brown in a 165 degree preheated
oven
