EGGLESS TUTTI FRUIT LOAF

Ingredients :

Maida – 1 and ¼ cup
Sugar – ½ cup
Thick yoghurt – ½ cup
Baking powder – ½ tsp
Baking soda – ½ tsp
Tutti fruity – ½ cup
Butter and oil – ¼ cup
Fruit essence i.e. orange, pineapple, rose etc – 2 tsps

Method :

1)     In a mixing bowl add sugar and curd and beat it nicely till sugar dissolves
2)     Add the fruit essences and butter/oil and beat well
3)     Add the baking powder and soda and keep aside for 10 mins (it will start frothing)
4)     In a plate sieve maida twice
5)     In a small bowl add the tutti fruity pieces and toss in 1 tbsp maida to coat it well
6)     Add the maida in the wet mixture, add the tutti fruity pieces and mix well with a silicone spatula
7)     Pour this batter in a greased loaf tin and bake for 30-35 mins in a preheated oven of 170 degrees
