Ingredients :
Maida – 1 and ¼ cups
Sugar – ½ cup
Butter – ½ cup
Vanilla essence – 1 tsp
Coco powder – 3 tbsp
Baking powder – ½ tsp
Cashew nuts – ½ cup
Milk – 2 tbsp
Method :
1)
Powder ½ cup cashew nuts less a few for garnishing to a
fine powder
2)
In a mixing bowl add the butter and sugar and cream it
well
3)
Add the vanilla essence, cashew nut powder and milk and
mix well
4)
Mix the maida, coco powder and the baking powder and
add this to the mixture
5)
Make a smooth firm dough, cover it with a cling foil
and refrigerate for 30 mins
6)
Powder the rest of the cashew nuts to small chunks
7)
Roll it into a ½ inch thickness, cut into cookies
8)
Press a few cashew nut pieces on to the cookie and bake in a greased tray for 30 mins in a preheated oven of 160 degrees
note :
I did not have coco powder so I used my children's coco drink Nesquik.. it was still awesome
the dough tends to break so roll it very lightly, cut into shapes and very carefully place it in the baking tray
