BEETROOT RAITA - SOUTH INDIAN STYLE

Ingredients :

Grated beetroot – 2 cup
Salt to taste
Fresh grated coconut – ½ cup
Green chillies – 3
Ginger – 1”
Garlic – 1 (optional)
Yoghurt – 1 cup
Water – 2 tbsp

For tempering :

Coconut – 2 tsps
Rai – 1 tsp

Method :

1)     In a pan take grated beetroot sprinkle 2 tbsp water and salt and cook till well cooked
2)     Make a smooth paste of coconut, green chillies, ginger and garlic (if adding) with ½ the yoghurt
3)     Once the beetroot mixture is cooled, add this paste and stir well
4)     Add the rest of the yoghurt and mix well
5)     In a pan take coconut oil and splutter mustard seeds
6)     Add this to the raita



you can have this with plain steamed rice as well
