BEAN SPROUTS SALAD

Ingredients :

Bean sprouts – 2 cups
Finely chopped carrots – ½ cup
Finely chopped cabbage – ½ cup
Fresh grated coconut – ¼ cup
Vinegar – 2 tbsp
Salt to taste
Finely chopped green chillies – 2
Finely chopped coriander leaves – for garnishing

For tempering :

Oil – 1 tsp
Rai – 1 tsp

Method :

1)     In a pan take oil and splutter rai
2)     Add the beans sprouts and cook for 5 mins
3)     Add carrots, green chillies, cabbage, salt and cook for another 5 mins, switch off the gas
4)     Add the coconut, vinegar, and coriander leaves and mix well
