FRESH COCONUT SAMBHAR (PACHCHA THENGA KOZHAMBU)

This is a type of sambhar which is made by people from Tirunelvelli. I used to love this kozhambu when my father in law used to make.


Ingredients :

Tamarind soaked in hot water – lemon size
Salt to taste
Veggies like drumstick, white pumpkin – 1 cup
Fresh grated coconut – 1 cup
Haldi powder – 1 tsp

To roast and grind into a paste :

Coconut oil – 1 tsp
Methi seeds – 1 tsp
Red chillied – 5-6
Tur dal – 2 tbsp

For tempering :

Coconut oil – 1 tbsp
Mustard seeds – 1 tsp
Curry leaves – 5-6

Method :

1)     In a pan take plain water add haldi powder salt and add veggies
2)     Once half cooked add the tamarind pulp and boil well
3)     In the meantime, in a pan take coconut oil and roast all the ingredients to roast
4)     Switch off the gas once it is light brown and grind it to a smooth paste with fresh grated coconut
5)     Add this to the cooked veggie mixture and boil for 2 mins
6)     In a pan take coconut oil, splutter mustard seeds and curry leaves
7)     Add this to the sambhar
8) serve this with rice and some roast veggie
