ROASTED AND GROUND SAMBHAR (WITHOUT DAL) - VARUTHA ARACHA KOZHAMBU

This is a type of sambhar which doesnt have dal, extremely tasty to be had with hot steaming rice

Ingredients :

Tamarind soaked in hot water – lemon size
Salt to taste
Haldi powder – 1 tsp
Veggies like drumstick, carrot, potato – 1 cup

To roast and grind :

Ghee – 1 tsp
Chana dal – 1 tbsp
\urad dal – ½ tbsp.
Coriander seeds – 1 tbsp
Methi seeds – ½ tsp
Red chillies – 5-6
Raw rice – 1 tsp
Grated coconut – ¾ cup

For tempering :

Coconut oil – 1 tbsp
Mustard seeds – 1 tsp
Curry leaves – 5-6

Method :

1)     Take water in a vessel add the veggies, haldi powder, salt and start boiling
2)     Once half cooked, add the tamarind pulp and boil till the veggies are cooked
3)     In a pan take ghee and roast all the ingredients except coconut till it becomes light brown
4)     Add the coconut, fry for a min more and switch off the gas
5)     Make a paste of this adding water.
6)     Add this paste to the veggie mixture and boil for 2 mins till well blended
7)     In a pan take coconut oil, splutter mustard seeds and curry leaves and add this to the sambhar
