Ingredients :
Couscous soaked in hot water for half hour – 1 cup
Salt to taste
Carrots finely chopped – ¼ cup
Green peas – ¼ c up
Frozen corn – ¼ cup
Onions finely chopped - 1
Green chillies finely chopped – 4
Grated ginger – 1 tsp
For tempering :
Oil – 2 tbsp
Rai – 1 tsp
Urad dal – 1 tsp
Chana dal – 1 tsp
Method :
1)
In a pan take oil splutter rai, urad dal and chana dal
till it becomes light brown
2)
Add onions, green chillies, ginger and sauté till it
becomes light brown
3)
Microwave the carrots till they get cooked
4)
Add the cooked carrots, peas, corn and salt and sauté for
a min
5)
Fluff the couscous and add this to the mixture and sauté
for a min
6)
Serve this healthy with pickle
