SOJJI APPAM

Ingredients :

For the outer covering :

Maida – 1 cup
Thin rawa – 3 tbsp
Salt – a pinch
Oil – 2 tbsp
Water – as required

For the filling :

Rawa – ½ cup
Coconut – ¼ cup
Jaggery – ¾ cup
Water – 2 and ½ cups
Cardamom powder – ½ tsp

Oil for frying

Method :

For the outer covering :

1)     In a mixing bowl add the maida, salt, rawa and mix well
2)     Add water slowly and make a pliable but firm dough
3)     Apply oil and keep aside for an hour

For the filling :

4)     In a non stick pan add the sooji and roast till light pink, keep aside
5)     In the same pan add jaggery and water and boil till it becomes a little thick, no string
6)     Add the coconut and sooji and cook till rawa gets cooked
7)     Garnish with cardamom powder and let it cool
8)     Make small balls out of the filling and slightly larger balls with the covering
9)     Pat the covering into a small puri, keep the filling in and seal it.
10) Grease your hands with ghee and slightly pat it to make into a small puri
11) Prick with forks as it should not fluff while frying
12) Deep fry this in oil on sim flame
