EGGLESS SAFFRON COOKIES

Ingredients :

Maida – 1 and ½ cups
Powdered sugar – ½ cup
Warm Milk – 2 tbsp
Saffron – 1 tsp
Roughly powdered pistachios – for garnishing
Ghee – ½ cup
Cardamom powder – ½ tsp

Method :

1)     Soak the saffron in the warm milk and keep aside
2)     In a mixing bowl cream ghee and sugar
3)     Add the maida and the cardamom powder and mix well
4)     Add the milk and make a smooth dough
5)     Try to roll into a thick roti and cut into cookies (if its hard to roll make balls and flatten them)
6)     Sprinkle pistachios  over it and bake for 10-12 mins in 160 degrees taking care not to burn them
