Ingredients :
Couscous – 1 cup
Hot boiling water – 2 cups
Salt to taste
Finely chopped onions – 1
Finely chopped capsicum – ½
Finely chopped tomatoes – 1
Chilli powder – 1 tbsp
Green peas or corn – ¼ cup
Finely chopped coriander leaves
For tempering :
Oil – 1 tbsp
Mustard seeds – 1 tsp
Turmeric powder – 1 tsp
Method :
1)
In a wide pan add the couscous and soak it in hot
boiling water, close and keep aside for an hour
2)
In a pan, take oil, splutter mustard seeds and add
turmeric powder
3)
Sauté onions for 2 mins
4)
\add capsicum and sauté for 5 mins
5)
Add tomatoes, salt and sauté till mushy
6)
Add the green peas, chilli powder and mix well
7)
The couscous would have soaked the water well, fluff it
with a fork
8)
Add the fluffed couscous in the onion tomato mixture
and mix well
9)
Garnish with coriander leaves
