COCONUT CUMIN BISCUITS

Ingredients :

Wheat flour – 10 tbsp
Dessicated coconut – 4 tbsp + for garnishing
Salt to taste
Sugar – a pinch
Baking powder – ¾ tsp
Cumin seeds roasted and cooled – 1 tbsp
Freshly ground pepper – ½ tbsp.
Rice bran oil – 3 tbsps
Yoghurt – 7 tbsp
Milk from brushing

Method :

1)     In a wide bowl mix wheat flour, coconut, salt sugar, baking powder, cumin seeds, pepper and mix well
2)     Add the oil and mix to resemble bread crumbs
3)     Add the yoghurt slowly to make a firm but smooth dough
4)     Roll this into a 5 mm thick roti, cut it in to cookies and line it in a greased baking tray.
5)     Brush with milk and garnish with dessicated coconut
6)     Bake for 20-25 mins in a preheated owen of 180 degrees
