CHETTINAD POTATO BIRYANI

Ingredients :

Small potatoes peeled – 15
Salt to taste
Basmati rice – 2 cups
Cardamom – 4
Cloves – 4
Onions sliced thin – 1
Tomatoes chopped – 1
Ghee – 2 tbsp
Bay leaf - 3


For making paste and marinating :

Ghee – 1 tbsp
Mint leaves – ¼ cup
Salt to taste
Green chillies – 4
Ginger – 1 inch
Garlic sauted  – 3
Curd – 3 tbsp
Onions sauted - 1
Fennel seeds – 1 tsp
Stone flower - 3

Method :

1)     Par boil the potatoes till half done
2)     In a pan take 1 tbsp ghee and sauté onions garlic and green chillies (in the marination ingredients)
3)     Make a paste of this along with the other ingredients for marination
4)     Apply this on the potatoes, add turmeric powder, salt and keep aside for half hour
5)     In a pan take 2 tbsp ghee and add cardamom, bay leaf and cloves
6)     Add the onions and sauté till light brown
7)     Add tomatoes and sauté well, add salt
8)     Add the marinated potatoes and sauté for 5 mins
9)     Add washed rice and sauté for 5 mins
10) Add 5 cups of water and cook till potatoes and rice and done
Serve hot with raita
