Ingredients :
Palak roughly chopped – 1 cup
Green chillies – 5
Coriander leaves roughly chopped – ¼ cup
Ginger garlic paste – 1 tbsp
Cooked Chick peas – 1/4 cup
Basmati rice soaked in water for 10 mins – 1 and ½ cups
Salt to taste
Water – 2 and ½ cups
Ghee – ½ tbsp. + 3 tbsp
Sliced onions - 1
Method :
1)
In a pressure cooker take ghee and sauté the palak,
green chillies, ginger garlic paste and the coriander leaves for 2 mins, make
sure the colour doesn’t change
2)
Make a puree of this
3)
In the same cooker take 3 tbsp ghee, sauté onions till they become light pink
4)
Add the chick peas and sauté for 5 mins
5)
Add salt and the soaked rice and sauté for 5 mins
6)
Add the spinach puree and 2 and ½ cups of water and
cook for 1 whistle
7)
Once cooled, fluff it with a fork and serve hot with carrot pachdi
Note :
you can even add little chopped spinach. I felt the spinach was a bit less and i did not have time to again saute it, so i added some and it turned out good
