This is one of my favourite veggie and my mom makes it super yum.. Unfortunately my husband is allergic to yam so i can not make it, hence when i go to mom's house, she first makes this for me.
Ingredients :
Yam cut into small cubes – 1 cup
Lobia soaked in water for an hour – ½ cup
Salt to taste
Turmeric powder – 1 tsp
Make a paste of :
Fresh grated coconut – ½ cup
Jeera – 1 tsp
Red chillies – 3-4
Urad dal roasted – 1 tsp
For tempering :
Coconut oil – 1 tbsp
Rai – 1 tsp
Urad dal – 1 tsp
Curry leaves – 4-5
Method :
1)
Cook the lobia in the cooker with turmeric powder and
salt for 1 whistle (do not mash it, it gets cooked easily)
2)
Cook the cubed yam in an open pan with salt and
turmeric powder till cooked
3)
Add the paste and the cooked lobia and mix well, cook
for 5 mins
4)
Take a small pan add coconut oil and splutter rai and
urad dal
5)
Add curry leaves and temper the kootu
Note :
you can make it slightly thicker and have it with rotis as well
