BAINGAN BHARTHA

Ingredients :

Big brinjal – 1
Finely chopped onions – 1 big
Finely chopped tomatoes – 2 medium
Jeera – 1 tsp
Oil – 2 tbsp
Garam masala – 1 tsp
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1 tsp
Salt to taste
Red chillies – 2-3
Ginger garlic paste – 1 tbsp
Chopped coriander leaves – for garnishing

Method :

1)     Roast the brinjals in an open flame till it seems cooked and shrunk, put it in cold water
2)     Remove the skin and mash it with the masher
3)     In a non stick pan take oil, splutter jeera
4)     Add turmeric powder, mix well
5)     Add the chopped onions and sauté till brown
6)     Add the ginger garlic paste, chilli powder, red chillies, coriander powder, cumin powder, salt and sauté well
7)     Add chopped tomatoes and sauté till it becomes mushy
8)     Add the mashed brinjal, garam masala and cook on sim flame for 5 mins
9)     Garnish with coriander leaves
