I have very fond memories of this vegetable. my mom is very generous when it comes to oil and roasts it well even today. This goes very well with sambhar or rasam
Raw banana - 4
salt to taste
chilli powder - 1 tbsp
hing - 1 tsp
oil - 2 tbsp
coconut oil - 1 tbsp
rai - 1 tsp
turmeric powder - 1 tsp
Method :
1) cut the bananas into small cubes
2) in a non stick pan, add the oils
3) splutter rai, add turmeric powder
4) add the cubed bananas and cook in open flame, till it gets cooked
5) once roasted add salt, chilli powder and cook on low flame for 10 mins to roast well
Note :
sometimes the banana gets mashed, the secret is not to put salt at the start. first roast it and then add salt
