This vegetable tastes best when had with onion sambhar. My
mom used to make this on Sundays.
Ingredients :
Potatoes boiled – 3
Salt to taste
Lemon juice – 1 tbsp
Curry leaves – 5-6
Tempering :
Oil – 1 tbsp
Green chillies slit lengthwise – 3-4
Ginger – 1” mashed (retain the piece so that it can be
removed once the flavor enters the veggie)
Urad dal – 1 tsp
Rai – 1 tsp
Method :
1)
Mash the potatoes and keep aside
2)
In a pan, take oil, splutter rai, urad dal, green
chillies and ginger
3)
When the dal become light pink, add the mashed potatoes
4)
Add salt, curry leaves and cook on low flame for 5-10
mins
5)
Remove the ginger piece and add lemon juice.
