This kheer is generally made for any occasion in most south Indian houses right from a wedding to a festival to a simple occasion in the house.
Ingredients :
Milk – 1 litre
Rice – 4 tbsps
Sugar – 1 and ½ cups
Method :
1)
In a pressure cooker, take the milk
2)
Close and give 1 whistle (be careful as the milk tends
to come out of the cooker and splash all around)
3)
Once pressure is down, add the rice and give one
whistle.
4)
You will see that the payasam has become light pink in
colour
5)
Add the sugar and boil till it gets dissolved
Note :
You can even add condensed milk but it becomes too heavy
Some people put cardamom powder, but I like it plain with
the milk smell
You don’t need to temper with cashew nuts etc because of the
rice
