Ingredients :
For the rice :
Basmati rice – 1 cup
Salt to taste
Whole garam masala (tejpatta, cloves, cardamom, pepper,
jeera) - 3 tbsp
Ginger paste – 1 tsp
Chilli powder – 1 tsp
Garam masala – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Ghee – 1 tsp
Turmeric powder – 1 tsp
Cumin – 1 tsp
For the Ghattas :
Besan – ½ cup
Salt to taste
Yoghurt – 3 tbsp
Chilli powder – 1 tsp
Cumin seeds – 1 tsp
Soda bicarb – ½ tsp
Turmeric powder – 1 tsp
Ginger paste – 1 tsp
Water – required for the dough
Method :
For the rice :
1)
In a pan take ghee, add cumin, turmeric powder and sauté
well

Add cumin powder, garam masala, coriander powder and
mix well
3)
Add the soaked rice and sauté for 5 mins
4)
Add water and cook the rice till the grains are
separate, keep aside to cool
For the ghatta :

Mix all ingredients and add little water to make a
tight dough

Divide the dough and make a thin cylinder of each

Boil this in water for 10 mins, cut it into small
rounds and keep aside
8)
Mix the rice and the ghattas and sauté for another 5
mins
9)
Garnish with coriander leaves, Serve hot with raita
