STRAWBERRY SANDESH

Ingredients :

Full fat milk - 1 litre
vinegar - for breaking the milk
fresh cream - 2 tbsp
sugar - 4 tbsp
strawberry reserve - 1/4 cup
strawberry essence - 1 tsp
chopped pistas - for garnishing
cardamom powder - 1 tsp
saffron strands - a few
red food colour - a pinch

Method :

1) Boil the milk in a heavy non stick pan. 
2) add the vinegar, once the milk curdles switch off the gas and cover for 2-3 mins
3) strain this mixture, wash it under cold running water and tie in a muslin cloth with a tight knot to remove all the water for 1/2 hour
4) in a vessel, add this paneer and mash it nicely with your palm for almost 20 mins till you can see the oil oozing out.
5) add the sugar, cream, red food colour, strawberry reserve and mix well
6) in a non stick pan, add this mixture, cardamom powder, saffron and cook till the mixture leaves the sides and become a nice smooth dough. (do no heat this in high flame)
7) cool this, make small balls, make an impression in the centre and garnish with chopped pistachios
