FALAFEL SANDWICH WITH HUMMUS

Ingredients :

for the falafel :

chick peas soaked overnight - 1 cup
parsley leaves - 1 bunch
coriander leaves - 1/4 bunch
salt to taste
lime juice - 2 tbsp
green chillies - 2
jeera - 1 tsp
besan - 2 tbsp
oil for frying

method :

1) in a chopper take all the ingredients except besan and do a grr.. till it becomes powdery and coarsely ground. you can add little water
2) add besan and bind well
3) make balls or tikkis out of the mixture and keep it in a plate
4) take oil in a pan, add the tikkis one by one with a spoon.

Note :
they tend to be quite fragile so be very careful when you drop them in the oil


For the Hummus :

Ingredients :

boiled chick peas - 1 cup
salt to taste
lemon juice - 1 tbsp
tahina - 3 tbsp
garlic - 1
Olive oil - 2 tbsp

method :

1) in a mixie take all the ingredients except olive oil and grind well into a smooth fine paste. You  may need to add little water as it would be hard to grind it
2) add the olive oil and mix well.



To proceed with the falafel sandwich :

Arabic rotis - 1 pac
sliced cucumber - 1
chopped salad leaves 

1) Take the rotis and tear open the top part
2) apply the hummus all over the inner part of the roti
3) put some sliced cucumber and leaves
4) crush 2-3 falafels and add
5) roll this and have with chilli sauce
