MALABAR SPINACH CURRY

Ingredients :

Lobia soaked in water for 2 hours -1 cup
Salt to taste
Malabar spinach leaves chopped fine along with tender stalk – ½ cup
Tamarind – marble size
Oil – 1 tbsp

To dry roast and grind into powder :

Oil – ½ tsp
Coriander seeds – 1 tbsp
Jeera – ½ tsp
Red chillies – 4
Pepper -1/2 tsp
Mustard seeds – ¼ tsp

For roast and grind

Oil – ½ tsp
Fresh grated coconut – 1 cup
Onions chopped roughly – 1
Garlic – 3

Method :

1)     In a pressure cooker, cook the soaked lobia for 1 whistle till well cooked, keep aside
2)     In a small pan take ½ tsp oil and roast all the ingredients for the spice powder, make a powder of this
3)     In the same pan, take ½ tsp oil and roast the onions, coconut and garlic till the raw smell goes away
4)     Put the roasted ingredients along with the spice powder and tamarind and grind it to a smooth mixture
5)     In a pan, take the ground mixture and sauté it for 5 mins
6)     Add the chopped spinach and sauté till cooked and it leaves out water
7)     Add salt and the cooked lobia and cook till well blended

8)     Serve hot with chapathi and a dry subzi
