Ingredients :
Tomatoes pureed - 3
Onions sliced - 1
salt to taste
chilli powder - 1 tbsp
mint leaves chopped - 10
basmathi rice soaked for 1/2 hour - 2 cups
coconut milk - 2 cups
water - 1 cup
ghee - 3 tbsp
oil - 3 tbsp
frozen peas - 1 cup
Paste of :
small onions - 7-8
ginger - 1 inch
garlic - 2
fennel seeds - 1 tbsp
Method :
1) In a pan add the oil and ghee and saute the sliced onions and mint leaves till brown
2) add the ground paste and saute till the raw smell goes off
3) add chilli powder, salt and saute well
4) add the tomato puree and saute till the water dries up 3/4
5) add the frozen peas and mix well
6) add the coconut milk and water, mix and cook the rice till cooked and the grains are separate
