SINDHI KADHI WITH TOMATOES

This dish is courtesy my friend Meena Lulla, who is an excellent cook

Ingredients :

Tomatoes cooked, pureed and seived - 1 kg
salt to taste
besan - 4 heaped tbsp
green chillies - 4
cluster beans (whole) - 10
lady's finger (whole) - 4-5
potatoes quartered - 2
carrots quartered - 1
drum stick cut into 3 inch - 1
curry leaves - 4-5
methi seeds - 1 tsp
jeera - 1 tsp
oil - 2 tbsps

Method :
1) In a wide pan add oil, splutter methi seeds and jeera
2) add the besan and saute it in medium flame till a nice aroma comes out and is slightly brown in colour
3) add ladys finger, curry leaves and saute for 5 mins
4) add the tomatoe puree stirring continuously, whisk it with the egg beater to form a smooth mixture
5)add salt, green chillies, carrots, potatoes, cluster beans, drumsticks, and mix well
6) boil for around 1/2 hour or till done on sim gas
7) serve with hot steamed rice
