COCONUT BAATH CAKE

This cake is baked for christmas. I have tasted this when i was young and I used to love it but never knew how to make it. I have taken this recipe from 2-3 sources and have made it by myself

Ingredients :

Grated coconut - 2 cups
rawa - 1 cup
powdered sugar - 1 and 1/2 cups
vanilla essence - 3 tsp
butter - 5 tbsp
corn flour - 1 tbsp
maida - 3 tbsp
baking powder - 2 tsp
eggs - 2
milk - 3/4 cup

Method :
1) Take grated coconut, rawa, sugar, baking powder, corn flour, maida in a bowl.
2) beat eggs in a seperate bowl till fluffy
3) add butter, milk and the dry ingredients and mix with a spatula. This mixture should be a thick pouring consistency. keep this covered overnight for 8-9 hours
4) add vanilla essence and mix well
5) bake in 180 degrees C for 35-40 mins

You can grind the coconut, I like the coconut to be visible and felt so I dont grind it
you can even put nuts on top.
