MEXICAN RICE WITH BEANS

Ingredients :

Basmati rice soaked for 1/2 hour - 1 cup, 

Rajma beans cooked - 1/4 cup
onions thinly sliced - 1 medium, 
spring onions cut - 3
red capsicum chopped roughly - 1
tomatoes chopped roughly - 2 big
salt to taste
jalapeños - 2-3
oregano - 1 tbsp
garlic - 3
carrots grated - 1
olive oil - 3 tbsp
whole red chillies - 1-2
water or vegetable stock as required to cook rice

Method :

1) Heat 1 tbsp of olive oil add capsicum tomatoes red chillies jalapeño and garlic and sauté till it becomes light brown
2) grind this into a paste
3) In another pan add the remaining oil sauté onions till golden brown
4) add rice and sauté well for 5 mins
5) add grated carrots, ground paste, salt and water and cook till half done 
6) Add the beans and the oregano and cook till done. 
7) You can garnish with spring onion leaves..
