NEI PAYSAM

This paysam is made for ayyappa pooja or for bhagvad sevai.. very rich with ghee floating on top, just out of the world when eaten hot.

Ingredients :
Jaggery - 6 cups
rice - 1 cup
coconut pieces cut into small dices - 1/4 cup
ghee - 1 cup


method :
1) cook the rice till the grains are separate but little mashy (this is because rice generally becomes hard when put into jaggery)
2) in a heavy bottomed non stick pan, add the jaggery and water just enough to cover the jaggery
3) when it melts completely, add the cooked rice, keep the gas sim and start stirring.
4) keep adding ghee in between and cook till it becomes semi solid
5) in a pan take 1 tbsp ghee and saute coconut pieces till fried and add this to the payasam.
