MEDHU VADAS

Ingredients :

Urad dal - 1 cup
green chillies - 5
curry leaves - 1 sprig
hing - 1 tsp
salt to taste
oil for frying

Method :

1) soak the urad dal for 1 hour
2) in a mixie grind the green chillies, curry leaves and hing to a fine paste
3) put the dal in a sieve till all the water is drained
4) in the grinding machine add the the dal and the masala and start grinding adding very little water. keep stirring with the grinding machine spoon in between so that it becomes fluffier. The dough should neither be very nicely ground not should it be watery. you should be able to put it in your hand and make a shape. Grinding it course will make the vadas crisp
5) heat the oil, test it by putting a small piece, if it immediately comes up,the oil is perfect
6) wet your hands, take a ball of dough with your right hand and flip it (it will form a shape as your hands are wet) and put it on the left hand. press it slightly and make a hole in the centre, put it into the oil. fry till done.
7) serve it with chutney or soak in sambhar and serve
