MAHARASHTRIAN POHA CHIVDA

Maharashtrians make this chivda for diwali.. very tasty,, healthy..

Ingredients :

Thin Poha - 4 cups
peanuts with skin - 1/2 cup
dhalia (chuteny dal) - 1/3 cup

For tempering :
oil - 1/3 cup
mustard seeds - 1 tsp
green chillies chopped fine - 6-7
dried coconut cut into small strips - 1/4 cup
salt to taste
turmeric powder - 1 tbsp
curry leaves - 10
sugar - 2 tsps

Method :

1) Microwave the poha in the owen for 1-2 mins
2) in a large pan, add the oil, splutter the mustard seeds
3) add the turmeric powder, chillies, curry leaves and saute well
4) add the peanuts and saute till fried 3/4
5) add the dhalia and the coconut pieces, saute well till it is fried well
6) add the salt, sugar and mix well
7) lastly add the poha and keep the flame very low and continuously keep stirring till the poha gets crisp
8) once cooled keep in an airtight box

Variation : some people fry garlic as well, but personally I dont prefer
