LEMON RICE

Ingredients :


Rice – ½ cup

Lemon juice – 1/5 cup

Peanuts – 5 tbsp (optional)

Salt to taste


To temper :

Oil - 2 tbsps

Red chillies pinched – 3

Mustard seeds – 1 tsp

chana dal – 1 tsp

Curry leaves – 5-6


Method :


1. Cook the rice till it is separate, don’t let it become sticky

2. In a pan, add the oil and splutter mustard seeds

3. Add the chana dal and peanuts and sauté till it becomes light brown

4. Add the chillies and curry leaves and sauté well

5. Add the lemon juice, salt and mix well, switch off the gas

6. Add the rice and mix well

7. Serve with fried papad
