COCONUT RICE

Ingredients :



Grated coconut – 1 cup

Rice – ½ cup

Salt to taste

Sugar – 1 tsp



To temper :

Coconut oil – 2 tbsps

Ghee – 3 tbsps

Green chilles cut into 1 inch – 2

Red chillies pinched – 2

Mustard seeds – 1 tsp

Urad dal – 1 tsp

Curry leaves – 5-6



Method :

1. Cook the rice till it is separate, don’t let it become sticky

2. In a pan, add the coconut oil and splutter mustard seeds

3. Add the urad dal, sauté till it becomes light brown

4. Add the chillies and curry leaves and sauté well

5. Add the coconut, salt and sugar and mix well, switch off the gas

6. Add the rice and mix well

7. Serve with fried papad
