PASTA IN WHITE SAUCE

Ingredients :
Pasta of your choice - 1 cup
salt to taste
freshly powdered pepper
olive oil - 1 tbsp
vegetables (optional) - corn, brocoli, cauliflower etc - these can be cooked and kept aside

For the white sauce :
Butter - 1 tbsp
maida - 2 tbsps
milk - 2 cups

Method :
For the pasta :
1) In a wide pan add the pasta, water, oil and salt and cook the pasta till just about done
2) put it in a strainer, show it under running cold water
3) take oil in your hand and just rub it on the pasta and keep aside

For the white sauce :
1) take a non stick pan, add the butter, melt it
2) add the maida and fry till you get a nice aroma
3) keep the flame sim and add the milk while stirring continuously making sure there are no lumps
4) add salt and freshly powdered pepper
5) it should have the consistency of a sauce
6) in a pan, add the pasta, pour the white sauce and mix well.
7) adjust salt and pepper.

Note : To avoid lumps, remove the pan from the gas after frying maida and then add the milk stirring continuously. even if lumps are formed, most of it would dissolve when we boil the milk. Finally you can beat it with a beater if you wish to have a smooth consistency.

you can garnish it with a little oregano as well
