Ingredients :
Palak - 1 bunch
paneer cubed - 1 cup
onions chopped roughly - 1 big or 2 medium
tomatoes (optional) - 1 small
salt to taste
garam masala - 1 tbsp
chilli powder - 1 tsp
whole garam masala (cardamom, cloves and cinnamon) - 1 tbsp
ginger garlic paste - 1 tbsp
mango powder - 1 tbsp (use this powder only if you are not using tomato)
Method :
In a pan dry roast the whole garam masala, keep aside
roughly chop the spinach leaves, microwave for 2 mins and make a puree out of it, keep aside
in a pan, add the onions and tomato and boil till it becomes soft
add the onion-tomato mixture, roasted garam masala, ginger garlic and grind it to a smooth puree
in a non stick pan, add this puree and saute it till it becomes light brown
add the garam masala, chilli powder, mango powder and salt
saute for 5 mins
add the spinach puree and mix well
once it is blended well, add the paneer pieces and mix well
Note :
If you add tomato, the colour of the vegetable would slightly change and wouldnt be green, hence I use mango powder for the sour taste
