AVAL PUTTU (PUFFED RICE CRUMBLE)

Ingredients :

Thick poha roasted to a pink colour - 1 cup
jaggery - 1 cup
water - 4 tbsps
cardamom powder - for garnishing
ghee - 5 tbsp
cashew nuts quartered and kismis - 2 tbsp
grated coconut - 3 tbps

Method :

Powder the roasted poha in the mixie to a powder (it should resemble semolina)
put it in a bowl and sprinkle water for it to get soaked. do this twice and crumble the powdered poha, keep aside
in a non stick pan, add jaggery and water and melt till you get one string. it should start frothing and thicken slightly. (do not wait for it to become hard)
add 1 tbsp of ghee and add the soaked poha powder.
cook till it blends well and the water dries up and the mixture doesnt stick to the sides of the pan
add 1 tbsp of ghee and put off the gas. garnish with cardamom powder
in a pan heat the remaining ghee, roast the cashew nuts, grated coconut and kismis and pour it over the sweet, mix well 
when it cools, it should resemble a soft crumble.
