THIRUVADARAI KOOTU

This kootu is made on Thirvadarai festival day along with kali and is to be had together with Kali. For this Kootu, you need to add a total of odd number of vegetables and pulses.

Ingredients :

White pumpkin cut into cubes - 1 cup
flat beans (avarikkai) cut into 1 inch - 3/4 cup
carrot cubed - 1/2 cup
potato cubed - 3/4 cup
red pumpkin cubed - 1/2 cup
sweet potato cubed - 1/2 cup
raw banana cubed - 1/2 cup
green peas - 1/2 cup
lobia soaked in water for 2 hours - 4 tbsp
chick peas soaked in water - 4 tbsps
peanuts soaked in water - 4 tbsp
salt to taste
Tamarind soaked in hot water for 1/2 hour - a large lemon size ball
turmeric powder - 1 tsp

To make a powder :

Dhania seeds - 4 tbsps
til - 5 tsps
red chillies - 5-6
Fresh grated coconut - 6 tbsp
hing - 1 tsp
ghee - 1 tbsp

For tempering :

coconut oil - 1 tbsp
mustard seeds - 1 tsp
curry leaves - 7-8

Method :

1) In a pan take ghee and roast the above ingredients except coconut for the powder
2) lastly add coconut and roast for 2-3 mins, make a powder and keep aside
3) steam the veggies and cook the pulses
4) in the cooker take the tamarind pulp, add salt, turmeric powder and hing and boil till the raw smell goes
5) add the veggies and the pulses and boil for another 5-7 mins
6) add the ground powder, mix well and cook for another 2-3 mins
7) take coconut oil in a pan, splutter rai and curry leaves, add to the kootu
8) serve hot with kali

Note :

with the left over kootu, the next day, you can keep the flame sim and cook till it becomes more thicker. its even more tastier and this can be had with chapathis.
