Ingredients :
Butter - 1/2 cup
onions chopped fine - 4
tomatoes chopped fine - 3
tomato puree/paste - made out of 3 tomatoes
capsicum chopped fine - 3/4 cup
pav bhaji masala - 4 tbsps
garlic chopped fine - 2 pods
vegetables (to be cooked) : potatoes - 4
green peas - 1 cup
cauliflower - 1 cup
carrot - 1/2 cup
beetroot - a small piece only for the colour
salt to taste
pao - as required
butter for sauteing the pao
Garnishing : onions and coriander leaves chopped fine and mixed, lemon juice if required
Method :
In a pressure pan add all the veegtable to be cooked and give 3-4 whistles
Once done, open the cooker and whilst it is hot, mash it with the pav bhaji masher and remove and kep aside
in the same pan add the butter and saute the onions and the garlic well till it becomes brown (if you dont saute it well, the onions become transulent once the tomotoes are put and it seems raw)
add the capsicum and saute it for 5 mins
add the tomaotoes and saute well till the tomatoes are mashed well.
add the puree, salt and the pao bhaji masala and mix well for 10 mins till the butter oozes out of the mixture.
add the cooked vegetable mixture and mix well and let it cook on slow flame for almost 10-15 mins
switch off the gas and add lemon juice
Cut the pao into 2 and apply butter on both the sides
sprinkle pao bhaji masala and saute it in butter
serve it with the bhaji, lemon quarters and finely chopped onions and coriander leaves
