AVIAL

Ingredients :

vegetables (to be chopped into 1 inch:
White pumpkin - 2 cups
snake gourd - 1/2 cup
raw banana - 1/2 cup
potato - 3/4 cup
carrot - 1/2 cup
green peas - 1 cup
yellow pumpkin (optional) - 1/2 cup
colaccasia - 1/2 cup
curry leaves for garnishing - 10
coconut oil - 2 tbsps
salt to taste
turmeric powder - 1 tsp

To be ground to a paste :

fresh grated coconut - 1 and 1/2 cups
green chilles - 4
curd - 3/4 cup

Method :

1) Steam all the vegetables in a rice cooker (some people boil the vegetables but i dont prefer doing. steaming in a rice cooker ensures that the vegetaable are neither over cooked nor under cooked)
2) put all the steamed vegetables in a pan, add enough water (*as per the consistency required), salt and turmeric powder and cook for 3-4 mins till well blended
3) add the ground paste and mix well, put the curry leaves and mix
4) switch off the gas and put the coconut oil on top and close
5) serve hot

water to be added as per requirement as some people have avial with rice in which case it needs to be slight loose. if you are having avial like a gravy for chapathi, then quantity of water needs to be lesser
