DRY BRINJAL & POTATO

Ingredients :

Small violet brinjals - 1/2 kg
Potatoes - 1 large or 2 medium
salt to taste
turmeric powder - 1 tsp
oil - 3 tbsp
mustard seeds - 1 tsp

To make into a powder :

dhania seeds - 4 tbsp
red chillies - 5
chana dal - 3 & 1/2 tbsp
fresh grated coconut -  3 tbsps
methi seeds - 1/2 tsp
hing - 1 tsp
ghee - 1 tbsp

Method :

Cut brinjals and potatoes into small cubes or strips, soak in turmeric water separately
micro wave the potatoes till they are half cooked
to make the powder :
In ghee, first put methi seeds and saute it for 1 min
Add hing, dhania seeds, chillies, chana dal and saute till the dals becomes brown
Lastly add the the coconut, saute it for 1 min and switch off the gas. make a dry powder once cooled
In a pan add oil and splutter mustard seeds
Drain the brinjals, potatoes and add, cover and cook
Add the salt and saute well till the brinjals are cooked
Lastly add the ground powder and mix well
