There are basically 3 chutneys that go into making of the perfect bhel. One is the sweet chutney, the second is the green chutney and the third is the red chutney.
SWEET CHUTNEY :
Ingredients :
Dates - 1 cup
tamarind - 1/2 cups
jaggery - 1 cup
chaat masala - 2 tbsps
Method :
Soak the tamarind, dates and jaggery in hot water for 3-4 hours.
grind it fine in the mixie
sieve it
boil the smooth mxiture till it becomes slightly thicker
once it cools, sprinkle the chaat masala and store it.
The proportion of the 3 main ingredients can vary according to one's taste. some people use more tamarind becasue they like the chutney to be a bit sour but i prefer more sweetness so i put more quantity of jaggery and dates. This is because we already have a lot of sourness in the bhel like tomatoes, chaat masala etc.
GREEN CHUTNEY
Ingredients :
Coriander leaves chopped roughly - 1 cups
mint leaves - 1/2 cups
green chillies - 10
salt to taste
grind all the above smoothly to a fine paste.
RED CHUTNEY
Ingredients :
red chillies - 5
garlic pods - 3
salt to taste
Soak the red chillies and the garlic in very little hot water.
grind the above along with salt to a fine paste by adding the same water.
you can store all these chutneys n a freezer and use it as and when you need it.
HOW TO PROCEED MAKING BHEL PURI
Ingredients for the bhel :
Onions chopped fine - 1 cup
boiled potatoes - 1
tomatoes chopped fine - 1/2 cup
coriander leaves - for garnishing
sev, puri
chaat masala - 1 tsp
kurmura - 3 cups
Method :
take a big vessel and put the kurmura
break the puris into small pieces and add
add the mashed potatoes and the chopped onions and mix well
add the 3 chutneys, salt and mix well. the chutneys need to be added according to your taste.
put this mixture in a plate and spread well.
sprinkle chaat masala
sprinkle sev till the bhel mixture is covered completely
garnish with chopped tomatoes
garnish with coriander leaves and keep a puri on top.
more than preparing the bhel, i am told that i am an expert in displaying the bhel puri!!!!!
