KALAKHAND - 1

Ingredients :
Milk - 7 cups
lemon juice - 2 tbsp
sugar - 1 cup
cardamom powder - to garnish
soaked and sliced almonds - 1/4 cup


Method :
1) soak the lemon juice in little warm water and keep aside
2) In a pan take 3 cups of milk, when it starts boiling add the lemon juice
3) when it starts curdling switch off the gas, put in a muslin cloth, show it under runnning water and tie it for the water to drain for around 45 mins
4) In the meantime, take the balance 4 cups of milk in a heavy bottomed non stick pan.
5) keep stirring continuously till it reduces to half.
6) add the paneer and keep stirring till it becomes a soft dough.
7) add the sugar and stir till it leaves the sides of the pan.
8) pour this in a greased plate and garnish with almonds and pistas if required
9) cut it into squares once cooled.

Tip : Before putting the milk to boil, add 2 tbsp of water in the pan, this avoids milk from sticking to the pan and getting burnt
