BAKED SPICY SPINACH MATRIS - 2

Ingredients :

Wheat flour – 1.5 cups
Maida – 1 cup
Salt to taste
Chilli powder – 1 tsp
turmeric powder - 1 tsp
Olive oil – 4 tbsp
Soda – ½ tsp
Green chillies finely chopped – 2
Grated ginger – 1 tsp
Finely chopped spinach leaves – 1 cup
Finely chopped methi leaves – ¼ cup

Method :

1)     In a wide mixing bowl add the maida wheat flour and soda and mix well, keep aside
2)     In a pan take oil add the ginger and green chillies and sauté till pink
3)     Add the spinach leaves and methi leaves and sauté till oil oozes out
4)     Add this mixture to the flour and mix with a spoon
5)     Add salt, turmeric powder and chilli powder and mix well
6)     Add lukewarm water slowly and make a tight dough
7)     Keep covered with a cling foil for half hour
8)     Roll this into a 1 cm roti and cut with a cookie cutter
9)     Line these in a baking tray, make slits with a knife for even cooking
10) Bake for 15-18 mins or till light brown
11) Cool and have with tea
