CORN AND CORIANDER RICE

Ingredients :

Basmati rice – 1 cup
Coriander leaves washed – 1 cup
Garlic – 2
Ginger – 1 small pc
Green chillies – 4
Salt to taste
Water – 1 and ½ cups
Frozen corn niblets – ¼ cup
Oil – 2 tbsp
Ghee – 1 tbsp
Sliced onions - 1

Method :

1)     In a pressure cooker add oil and ghee
2)     Add the onions and sauté till it becomes light pink
3)     Wash the rice, drain and keep aside
4)     Make a paste of coriander leaves, garlic, green chillies and ginger
5)     Add the chilli paste to the onions and sauté for 6-7 mins
6)     Add the rice and sauté for 5 mins
7)     Add the corn, add water and salt and give 1 whistle
8)     Once done fluff the rice with a fork making sure the rice doesn’t break
9)     Serve hot with the raita
