OKKARRAI

This sweet is made on the previous day night of diwali along with small onion sambhar and potato roast curry

Ingredients :

Chana dal – ½ cup
Jaggery – ½ cup
Cardamom powder – 1 tsp
Ghee – 3 tbsp
Cashew nuts broken – 2 tbsp

Method :

1)     Dry roast the chana dal till it becomes light brown, soak this in water for an hour
2)     Grind this to a fine paste adding no or very little water
3)     Steam this in a greased vessel in a cooker
4)     Once cooled, break this into small pieces
5)     In a non stick pan take jaggery and add 3 tbsp water
6)     Once it starts boiling and comes to a 1 string consistency, add the chana dal mixture and stir well till it becomes a dry mixture like puttu
7)     Keep adding ghee in between
8)     Roast cashew nuts in ghee and garnish along with cardamom powder
