BROKEN WHEAT PONGAL

Ingredients :

Broken Wheat – 1 cup
Moong dal – ¼ cup
Jaggery – 2 and ½ cups
Water – around ¾ cup or just enough to cover the jaggery
Cardamom powder – 1 tsp
Ghee – 4 tbsps
Fried cashews nuts and kismis – 3 tbsps

Method :

1)     In a pan dry roast the broken wheat to light pink, keep aside.
2)     Dry roast the moong dal till light brown in colour, keep aside
3)     In a pressure cooker, take a vessel and add the wheat and the moong dal, add 3 cups of water and cook for 2-3 whistles
4)     In a non stick pan, take the jaggery add the water and let it melt
5)     Remove the impurities and let it boil for a min
6)     Add the cooked wheat-dal mixture and mix well
7)     Add the ghee and the cardamom powder, mix well
8)     Garnish with cashew nuts and kismis
9)     Serve hot


Variation :

another desert that you can do out of this is a kheer. for this you should use only broken wheat, make it the same way and then add basundi and make it like kheer and have it too. in this case add little less jaggery as basundi also has sugar in it
