KAJU WITH GULKHAND LADDOOS

Ingredients :

Kaju – 1 cup
Milk powder – 2 tbsp
Sugar – 1 cup
Water – ¾ cup
Saffron – few strands

For filling :

Gulkhand – 3 tbsp
Mixed nuts – 1 tbsp
Cardamom powder – 1 tsp

Method :

1)     Powder the cashew nuts in a mixie to a fine powder. Do this in short spans as the cashew tends to leave out oil in high heat
2)     In a heavy non stick pan take sugar and water and bring to a boil till you get 1 and ½ strings
3)     Switch off the gas, add the cashew – milk powder and mix well till it forms a dough, cool this.
4)     Once cooled, mix this well to for a smooth dough
5)     Take a small ball of the cashew mixture, flatter it a bit with your finger in the middle
6)     Add the gulkhand mixture, close the outer covering gently and make a smooth ball
7)     In a cup warm water and add the saffron
8)     Apply this saffron little on the top of the cashew balls and stick a small slice of pistas for decoration
