CARROT RICE

Ingredients :

Rice – 1 cup
Grated or carrots cut into cubes – ½ cup
Finely chopped onions – ½ cup
Chilli powder – 1 tsp
Gun powder – 1 tbsp (recipe in masalas)
Salt to taste

For tempering :

Oil – 2 tbsp
Ghee – 2 tbsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Turmeric powder – 1 tsp

Method :

1)     Cook the rice till the grains are separate
2)     In a pan take oil and ghee and splutter mustard seeds and urad dal
3)     Add turmeric powder
4)     Add onions and fry till transculent
5)     Add the carrots, sprinkle water and cover and cook (if you are using grated carrots, no need to do as it will get cooked faster)
6)     Add the chilli powder and gun powder, salt and mix well
7)     Add the cooked rice, mix well
8)     Serve hot with chips or roasted potatoes
